Banh Kep La Dua (Pandan Waffles)

HAPPY SAINT PATRICK'S DAY!!!

Finally a holiday that I'm not behind on. The amount of shiny green outfits I've seen today has been incredible. What I envy is how capable Irish people are at holding down liquor. Why can't I be blessed with such a gift?

Regardless, I'm going to try my best to tie together my Vietnamese series with St. Patty's Day. So I whipped together some shamrock shaped pandan waffles to make everyone happy. For those who are looking for something else to celebrate St. Patty's with, I'm going to roll out two recipes today. So keep an eye out.

But on the pandan waffle note. As you all could probably tell, one of my favorite flavors is pandan. It's fragrant, floral, and earthy. It has a cheery color to it and tastes like sweet dessert goodness.

As a kid, I loved Eggos. I used to smear syrup, Nutella, fruits, or ice cream on it. It was my dessert sliced bread. But one day, my mom brought these hot waffles with this funny green color. Of course as a kid, you want to eat anything that's colored and looks cool. I brought it to my face and could instantly smell the sweet coconut infused in this warm pastry. There is something so comforting about the smell of coconut and pandan. I don't know if it's the nostalgia or the sweetness that lures me in and makes me forget my personal goal of cutting out carbs..., but I just smile at how safe I feel with a warm, crispy, pandan waffle.

INGREDIENTS:

  • melted butter

  • 1 c all-purpose flour

  • 1 egg

  • 1.5 c coconut milk

  • 1/3 cup granulated sugar

  • 1 tsp pandan extract

  • 2 Tbsp cornstarch

  • 1 tsp baking powder

1/4 tsp salt

INSTRUCTIONS:

  1. In a large mixing bowl, beat together egg until fluffy. Whisk pandan extract and coconut milk into the egg.

  2. In a separate bowl, combine dry ingredients (flour, sugar, cornstarch, sugar, baking powder, and salt).

  3. Combine wet and dry ingredients together until well incorporated.

  4. Spread melted butter on your waffle maker. Put about 1/4 c to 1/2 c of batter onto your waffle maker depending on the size of your maker.

  5. Follow the instructions of your waffle maker. Serve warm and enjoy!
